I have read elsewhere that the picture quality of OptusSport on a Fetch Mighty is 1080p and not the extremely poor picture quality that I get streaming from my Sony TV Optus Sport App. Can someone confirm if that is the case as I'll grab one.

Our Fetch TV Mighty set top boxes are capable of 4K content, so Optus Sports would be displayed in 4K on a TV capable of 4K and an Internet connection with minimum 15+ Mbps. If you have a TV only capable of 1080p, Optus Sports will display in that resolution accordingly, you'd just need to set the resolution in Display Resolution Settings on the Fetch TV set top box. The Fetch Mini is only capable of 1080p resolution so this may be a cheaper alternative if you only want 1080p or don't have a 4K capable TV. 4K is truly life changing. I went from a 720p TV to a 4K TV with 4K Netflix streaming and I was blown away by the detail. I mean, you can see minute details on the actor's faces.
