Multiple SIM cards activation

We have received 2 new SIM cards for 2 existing iPhones.  How do we know which card applies to which phone?

Just clarifying are they new SIM cards for activating new numbers, or replacement SIM cards to continue using the same phone numbers?

No paperwork received with them?
