The 4G disappears and the phone calls drop, or I have issues with the internet and with everything.
I have a S8, it has been happening for a looong time now and it is really annoying.

Are you on a prepaid or postpaid service?
Sounds like its not connecting to VoLTE (meaning calls over 4g)
If you dont have VoLTE your phone has to drop back to 3g to make or receive calls.
As was suggested above, sounds like your S8 is not connecting to VoLTE hence why it's dropping back to make/receive calls.
Check that it's enabled in your Mobile settings
Also speak to Optus technical support to make sure VoLTE is enabled on your account settings.
Did you get that phoen as part of your current plan?
If it was - try the following (I used my Samsung Note 8 to find the menu, not sure if same - good chance)
Click Mobile Networks
And make sure that you have "VoLTE" turned on there.
