You can probably do it via the my account portal however the last update has made a complete mess of the portal and it's impossible to find anything. I would be jumping on the live chat link below and asking support to change it for you.

Hi

You can now change to paperless billing using the My Optus app if you have mobile with Optus.

Open the app, click on billing and then manage paperless billing.
