An Apple sim is just a sim card that Apple has in other countries that they have done a deal with a Telco to re-sell services.
It is not storage, its just a means of connecting via cellular network.
Not all iPads are cellular compatible (it costs more to purchase).
You do not have to use an "Apple Sim", and Mobile Broadband plan can be used.
